As I mentioned in my previous blog post, where I shared listicles of a variety of cucumber dishes that I am going to try out this summer. So I tried making one of the cucumber recipes from that list, which is this simple cucumber pasta recipe, and surprisingly it turned out really well.

If you are an old reader of my blog posts, you know how much I love making pasta dishes because it is an easy yet tasty dish to make. This pasta is no less absolutely loved how it turned out with minimal effort and ingredients easily available at home, except one, which actually enhances the flavour of this pasta dish.

How to make cucumber pasta?

This simple cucumber pasta recipe is made with simple ingredients that are easily available at home, with a unique twist that makes it extra tasty.

Ingredients used to make this simple cucumber pasta

Fusilli Pasta – 1 Cup (or any pasta of your choice) – Buy Here

Butter – 1 small cube of butter

Vegetable oil – 1 tablespoon

Black pepper powder – 1 teaspoon. If you enjoy a stronger peppery flavour, you can increase it to 1 tablespoon – adjust the amount to suit your taste.

Soy Sauce – Now here is the twist I was talking about: adding soy sauce gives the pasta a rich, savoury (umami) flavour. It may sound unusual, but it really enhances the overall taste of the dish. – Buy Here

Cucumber – 1 large cucumber, as it’s the star ingredient of this recipe.

Green chillies – I used 3, but you can add more or less depending on your preference.

Garam Masala – Well, I was not planning to add it, but it turned out to be a great addition and gave the pasta a delicious depth of flavour. I used 1 tablespoon, but you can adjust the amount to suit your taste.

Asafoetida / Hing – 1 teaspoon. It adds a subtle aromatic flavour and enhances the overall taste of the dish.

Salt – 1 tablespoon. Adjust the quantity according to the amount of pasta you are making, and taste as you go to ensure the seasoning is just right.

Directions to make this simple cucumber pasta recipe

Step 1: Boil the pasta according to the package instructions until it is al dente. Drain the pasta and set it aside.

Step 2: Grate the cucumber and set it aside. Then, finely chop the green chillies into small pieces.

Step 3: Once the pasta is cooked, heat a kadhai over medium heat. Add the butter and let it melt completely. Then, add the vegetable oil in the quantity mentioned above.

Step 4: Once the butter and oil are hot, add the hing and ginger-garlic paste. Cook for a few seconds, then add the grated cucumber and chopped green chillies. Mix everything well and let it cook for 2-3 minutes.

Step 5: Once the cucumber has absorbed most of it’s water, add the garam masala and black pepper powder, soy sauce, salt and red chilli powder in the quantities mentioned above. Mix everything well and cook for a minute.

Step 6: Add the cooked pasta and mix everything well for 1-2 minutes. Taste and adjust the salt if needed. Once everything is well combined, serve hot and enjoy!

  • Grate the cucumber and set it aside. Then, finely chop the green chillies into small pieces.
  • Once the pasta is cooked, heat a kadhai over medium heat. Add the butter and let it melt completely. Then, add the vegetable oil in the quantity mentioned above.
  • Once the butter and oil are hot, add the hing and ginger-garlic paste. Cook for a few seconds, then add the grated cucumber and chopped green chillies. Mix everything well and let it cook for 2-3 minutes.
  • Once the cucumber has absorbed most of it's water, add the garam masala and black pepper powder, soy sauce, salt and red chilli powder in the quantities mentioned above. Mix everything well and cook for a minute.
  • Add the cooked pasta and mix everything well for 1-2 minutes. Taste and adjust the salt if needed. Once everything is well combined, serve hot and enjoy!
